Château Olivier 1988 - Tasting and food pairing

A Pessac-Léognan red wine from an exceptional vintage

The 1988 vintage was marked by a cold, dry winter, followed by a hot, dry spring and summer. The wine is a blend of 60% Cabernet Sauvignon and 40% Merlot from vines located in the Pessac-Léognan commune. It was aged for 18 months in oak barrels. Colour: Intense garnet-red with tile-like highlights Nose: Complex, intense aromas of red fruits (cherry, raspberry), black fruits (blackcurrant, blackberry), spices (vanilla, black pepper), tobacco and leather. Palate: A powerful, full-bodied wine with good acidity and a long, persistent finish. Cellaring : Drink now or cellar for several years.
